Sourdough pizza Sourdough pizza crust, a bit of olive oil and @spiceology pizza seasoning for the first layer, followed by smoked garlic, marinara, and parmesan cheese around the crust. For toppings I added pepperoni, salami, and diced up beef stick. It par baked for 5 minutes before adding the fresh mozzarella and more parmesan on top. This was done at 450 in the oven on convection bake. No fancy pizza oven here. Crispy crust, full of flavor from the sourdough and the seasoning, toppings and fresh mozzarella all shined through. The recipe and flour used were from @kingarthurbaking and have worked really well now a few times. My only addition to their process would be to add a bit of stretching after the dough is mixed, divide and shape to help with dough strength and then let rise.

Quick and easy chicken tacos Low carb tortilla loaded up with some chicken, guacamole, lettuce, cheese and sour cream. The chicken is Costco rotisserie chicken, shredded and warmed in chicken bone broth, some taco seasoning and @herdezbrand chipotle salsa. Guacamole is avocado, @spiceology guac and roll, fresh lime juice and some of the same salsa. For lunch today, a large salad with mixed greens, shaved Gouda cheese and more of the rotisserie chicken. Didn’t photo that one. The goal is to get the diet dialed in to start the year. The BBQ accountability group @scaleandtailor started is amazing and inspiring me to lock in!

A grilled take on Chicken Parmesan Grilled chicken breast topped with @raoshomemade and fresh mozzarella. Served with prosciutto wrapped asparagus, grilled broccoli, and garlic buttered, Parmesan sourdough with a little extra prosciutto. Saved a few calories by going grilled vs fried on the chicken. I don’t feel like I am missing anything. If you read this far. Thank you for your support. Looking forward to more great food; and pushing myself just a little more in the gym next year.
