Sunday Benedict English muffin, prosciutto, spin Sunday Benedict 

English muffin, prosciutto, spinach, poached egg and a sauce that looks like but is not hollandaise. 

I used some sour cream and hot sauce instead of hollandaise to  avoid the high volume of butter. 

Served up with a side of my home cured bacon.

When none of your protein is defrosted, you make b When none of your protein is defrosted, you make burgers! I always love a burger night and this cheeseburger was spot on! 

The burgers were grilled over @bearmountainbbq old fashioned blend for maximum wood fired flavor. I topped the patties with loads of @cabotcreamery cheddar cheese. Sometimes you're just feeling cheesy!  Some mixed greens, @grillospickles pickles, and @tbjgourmet bacon jam. 

On the side, some @wildechips protein chips.

Chicken and shrimp stir fry with noodles. Onions Chicken and shrimp stir fry with noodles. 

Onions, asparagus, broccoli, squash, carrots and bell pepper stir fried and tossed in a bit of soy sauce, @trybachans and @spiceology togarashi seasoning. Some cubed rotisserie chicken breast was tossed in as well. Cooked separately some shrimp seasoned in togarashi. In another pot some spicy noodles. Everything gets tossed together and topped with chili crisp and green onions.

When you make a big batch of Birria, you get to enjoy it in multiple formats! 

Quesadilla, breakfast burrito, or a little hash? 

Which would you pick? 

The breakfast burrito is golden potatoes, fried and tossed in @spiceology cowboy candy, some scrambled eggs, birria, cheddar cheese and some sour cream. 

The quesadilla is simply a flour tortilla, with quesadilla cheese and birria, painted in consume and cooked on the flat top. 

Finally. After the burrito I had a few leftovers that didn't fit in the tortilla, so a little breakfast hash? The rest of the potatoes, eggs, cheese,  Birria and some hot sauce

Grilled chicken over lemon orzo with Parmesan and Grilled chicken over lemon orzo with Parmesan and micro greens. 

I seasoned the chicken with @spiceology buffalo lemon pepper and grilled it over @bearmountainbbq red white and blue blend pellets for that perfect wood fired flavor. This blend burns super efficiently and provides amazing flavor even at higher grilling temps. 

The orzo cooked with chicken bone broth, lemon juice and lemon zest, seasoned with @spiceology Greek freak. 

I added Parmesan for a bit of cheese salty punch, and micro greens round of that umami flavor. 

The first photo is a beautiful shot of the dish, but I needed more protein so scroll to see the bowl with another chicken breast.

Bacon, Egg and Cheese. But not just any cheese! Bacon, Egg and Cheese. 

But not just any cheese! @cabotcreamery garlic herb cheddar really set this breakfast apart! The bacon is home cured as well, and just so good. Not really visible, but delicious is @tabasco chipotle raspberry jelly. 

Two eggs, two strips of bacon, some cheese, jelly and a brioche bun to start the day. Now time to go get those steps in!
Burger nights are always a winner. I went with o Burger nights are always a winner. 

I went with one beef patty and one @amylufoods white cheddar & jalapeno patty. Loads of @tillamook cheddar, some @kindersflavors BBQ sauce, @grillospickles  and micro greens. I cooked over a direct flame with @bearmountainbbq old fashioned blend pellets and tested out this new @thechefspress I got as a Christmas gift.

Chicken and Broccoli over white rice. I sliced t Chicken and Broccoli over white rice. 

I sliced the chicken breast and tossed it in @spiceology togarashi seasoning and just a bit of baking powder. I then gave it a little saute before adding lemon juice, soy sauce and chicken broth to the pan. I tossed in the broccoli and cooked till the broccoli was softened a bit and the chicken cooked through. 

To plate, I put some white rice in the bottom of the bowl and topped it with the chicken and broccoli. A drizzle of some hot sauce and a sprinkle of sesame seeds finished it off. 

Protein packed, a bit of fiber and micro nutrients from the broccoli and a touch of carbs from the white rice.

A relaxing weekend at the cabin, good eats, lots of time with the dogs enjoying the desert and Julian, some puzzle time and watching some football on TV.

Sheet pan dinner with crispy potatoes. This is Brussels, carrots, broccoli, and onion all tossed in avocado oil and seasoned with @spiceology cowboy candy and @boarsnightout white lightning. I also cut up some adells sausage and tossed that on top to bake. While it baked I cubed some potatoes, pan fried them, and then tossed em in cowboy candy. 

The chicken sandwich was my cooked chicken from stir fry, drizzled in buffalo sauce and served with @grillospickles on a store bought bun. 

Soup was a cheese soup with a veggie base, using carrots, onion, celery and broccoli with chicken bone broth, tons of @cabotcreamery cheddar cheese, some cream cheese and topped with sausage and bacon. I did use some xanthan gum as a thickener.

Finally some low carb tortillas loaded with sauteed chicken breast, avocado, jalapeno, some lettuce, sour cream and cheddar cheese. Chicken was cooked in taco seasoning and salsa.

Some more of my eats from last week to fuel my pro Some more of my eats from last week to fuel my progress towards reducing body fat %. Kept my workouts consistent, mostly healthy meals, lots of daily steps. 

The chicken stir fry was delicious. Chicken was tossed in equal parts of rice flour and corn starch, and pan fried. I made a lot of extra for meal prep. Burger was done stovetop, which is rare for me, but delicious with bacon, pickles, lettuce and mustard. And a good ole charcuterie board with 10 year @cabotcreamery cheddar being the winner!  Finally some scrambled eggs, with tons of spinach and cheese.

Everything is loaded with protein. Generally pretty low carb. And real food focused.
Another high protein lunch today. Hearts of Romain Another high protein lunch today. Hearts of Romain and celery are the base, tossed in @litehousefoods homestyle ranch and @spiceology togarashi seasoning. I then mixed in some Parmesan cheese and topped it with 2 hard boiled eggs and a cubed up pork chop. The pork chop was seasoned with the same togarashi and smoked with @bearmountainbbq pellets. 

It's amazing how wildly different you can make a salad taste by using a good seasoning to bring life to your lettuce base.

2026 goal, get to sub 20% body fat percentage (I e 2026 goal, get to sub 20% body fat percentage (I estimate this around 165lbs). I will maintain my workout routine and focus and high protein and low carb again. More real food and less snacks as well. 

This was my start, a workout this morning (first one in 2 weeks!) and a salad with @bearmountainbbq smoked pork chop seasoned with @spiceology garlic junkie. 

Nothing too crazy for new years resolutions, more marginal improvement and iteration on this journey I have been on for years now. 

Help hold me accountable, I'll do the same for you and we can continue to improve together.

What a busy and truly wonderful year it has been! What a busy and truly wonderful year it has been! We are so thankful for the many incredible experiences we've shared with family and friends.

We kicked off 2025 with a historical trip to Washington D.C., exploring countless museums and walking the city.

The year of milestones quickly followed! We celebrated my 40th Birthday in sunny Cabo with close friends-a perfect trip full of fun and relaxation. Later in the Spring, we embarked on a remarkable journey to Italy to celebrate my 10-year work anniversary (achieved last year). Our Italian adventure was filled with architecture, cooking, delicious dining, and scenic hikes through Rome, Florence, Cinque Terre, Venice, and Milan.

Closer to home, we enjoyed time outdoors, celebrating Lisa's birthday in Big Bear with Jet and Ember, enjoying fall leaves, lake time, and beautiful hikes. With lots of help from Lisa's parents we built a new front deck for the Julian cabin. We spent relaxing pool time and plenty of fetch with the pups at my parents.

Somewhere in between all the fun, we both continue to achieve success in our current roles at work and are gearing up for a wonderful year ahead.

Wishing you a joy filled holiday season, full of laughter and time spent with loved ones.

Sometimes you just need a burger and Fries. Gril Sometimes you just need a burger and Fries. 

Grilled burgers over @bearmountainbbq holiday blend pellets for a nice flame kissed burger. Loaded with @cabotcreamery habanero for a bit of heat and seasoned the burger with @spiceology poulet spices. Some @grillospickles and butter lettuce were all it needed. 

The potatoes were tossed in a mix of cowboy candy and garlic junkie.
Thanksgiving 2025 is a wrap! Turkey came out gre Thanksgiving 2025 is a wrap! 

Turkey came out great, pork belly burnt ends always hit the spot. The gravy was an absolute highlight and the rolls were a surprise win for a first time bake. The mashed potatoes are always a win, this year I did smoked garlic and cheddar mixed in and a parmesan crust on top. Lisa made the butternut squash dish, the roasted balsamic carrots and doctored up some cranberry sauce from Costco.

Tons of leftovers will make for some great sandwiches, tacos and omelette creations. 

I am thankful for those of you I have connected with through this platform. Especially thankful for those that encourage my journey OR I have inspired and you let me know, it keeps me going! 

Thankful for @bearmountainbbq and @cabotcreamery for the support all year and being an instrumental part of this meal! 

I also have to shout-out @scaleandtailor for putting together a food and fitness accountability group that has really kept me going this year. An incredible group of supportive friends who inspire me daily.

I love being able to do a quick grill on my @yoder I love being able to do a quick grill on my @yodersmokers with @bearmountainbbq pellets. An easy grill night with all the flavor of that woodfired goodness and the same ease as turning on the stove, with less dishes! 

I grilled the chicken first then threw on some skit steak for a quick sear on each side.

Fulfilling that hotdog craving I used the @slotdo Fulfilling that hotdog craving

I used the @slotdogdotcom to optimize my grilled dog experience. Once the turkey dogs opened up a bit I have them a healthy dose of @neilsarap tasty bark. The @bearmountainbbq gourmet blend gave these dogs a perfect char and texture all around. In a toasted bun. I loaded up some @cabotcreamery sharp cheddar and @tbjgourmet uncured bacon jam.  Super simple, but absolutely what I was craving.
