The classic breakfast3 eggs, 3 strips of crispy bacon and 2 slices of buttered toast.The eggs were cooked up in the bacon grease and seasoned simply with @redmondrealsalt garlic salt and fresh cracked pepper. BBQ breakfast OmeletteWhen I think of a Classic BBQ item, it's a pulled pork sandwich. What happens when you want a pulled pork sandwich for breakfast? You turn it into an omelette! This three egg omelette is loaded with pulled pork, topped with coleslaw (a pulled pork pairing perfection) and served with a side of bacon! I avoid the traditional BBQ sauce as most contain a ton of sugar, and who needs sweet when you can go spicy! Low carb chicken enchiladasPrep the chicken in advance and these come together very quickly! The chicken breast was cooked in a crock pot with enchilada sauce and then shredded and put back in the sauce. This was done the day before. One onion was sauteed till golden brown in a bit of butter and a pinch of salt. I added about half the onion to the chicken mixture as well as one can of sliced olives. This was loaded into a zero net carb tortilla that was dipped into some enchilada sauce and then also loaded with a handful of coastal cheddar cheese. The tortillas were then rolled and placed on a parchment lined tray and baked at 350 for 30 minutes. To serve I topped them with some @eatwholly avocado and Sour cream. Set yourself up for success with this avocado toastMake your avocado toast at home, exactly how you like it, save some money doing so and feel good after you eat! I start with a slice of low carb bread from @carbonautbaking which is toasted in a pan with unsalted butter. Then I layer on a serving of sea salt and avocado spread from @eatwholly and sprinkle on some crushed red pepper and feta cheese. The next layer is a fried egg, cooked to just set the whites and leave that yolk nice and runny. A bit more crushed red pepper and some fresh cracked black pepper over the egg. Next up is a drizzle of @terrapinridgefarms chili lime aioli and finally a slice of bacon seasoned with @neilsarap Mediterranean rub, cut into strips after cooking. Maybe my easiest buffalo chicken wing Wednesday yet.@sprouts Cajun butter wings, Into the smoker at 350 till they hit 165 internal, then I bumped them temp to 425 and pulled them when they looked nice and crispy(202 internal). Tossed the wings in @primalkitchenfoods buffalo sauce and I was done. Brought the bowl to the table, another bowl for the bones and a paper towel for those saucy hands. @bearmountainbbq hickory pellets for fuel kept the heat coming and burned so efficiently that even at the 350-425 temps very few pellets were needed and almost no ash in the smoker. National Cheeseburger DayBuild a burger with me! Ok, one for me and one for you, well build two burgers for good measure. Avocado and lettuce for the bottom layer, a grilled cheeseburger with extra cheese of course, then bacon, because bacon makes every burger better, and let's round it out with some tomatoes and pickles, with mustard on the top bun. Buffalo Chicken salad over mixed greensIs chicken salad the chicken mixed with this or is chicken salad a mixed green salad with chicken on it? Either way this is a chicken salad! I start by mixing one can of Costco chicken drained, and press out the remaining liquid(you could use tuna or rotisserie chicken too) with 2 tablespoons of @chosenfoods mayo and as much @franksredhot as you desire, I just kinda cover the chicken in it and usually add more till it looks nice and red. Add a pinch or two of salt, some fresh cracked pepper and about 1/2 teaspoon of celery salt. Mix it all together and set it aside. In a large mixing bowl, toss your mixed greens in @litehousefoods ranch and use enough to coat all of the greens. I like to chop my mixed greens to make it easier to eat and not make a mess, so I use a pair of kitchen scissors and simply cut them up in the bowl. Now dice up a few slices of @grillospickles dill pickle chips. Scoop the chicken right on top of those mixed greens and top with the pickles.
