Chicken Parmesan is just such an amazing comfort food. Chicken breast sliced in half to make it nice and thin, breaded and fried. Then topped with sauce and cheese. Served with some pasta and a glass of red wine. Just pure comfort. I used a 3 step breading of flour, egg wash and breadcrumbs w/ Parmesan. All seasoned with @boarsnightout white lightning. The chicken is then pan fried in oil at 350. The sauce is @raoshomemade and topped with some fresh mozzarella and Parmesan. Then it is broiled to melt the cheese. The pasta also used the same sauce and some Parmesan cheese.

Salad and Tacos. Yesterday was good eating with @delrealfoods carnitas tacos for lunch, loaded with carnitas and @cabotcreamery seriously sharp cheddar cheese. Topped with some salsa. Dinner was a salad with an arugula and romaine based tossed in @litehousefoods ranch and mixed in with mint and basil. For the extras I loaded grilled zucchini, toasted pecans, feta cheese and rotisserie chicken. Not pictured was a quest bar and quest peanut butter cups as well as a protein shake. #dailyfood #salad #tacos #carnitas

Turkey Meatballs. Roasted potatoes and Asparagus. This is a nice balanced meal all cooked in the smoker to keep the kitchen cooler on a hot summer day. The turkey meatballs are Greek inspired with feta, lemon, garlic, and dill for flavor. The potatoes are tossed in olive oil and @spiceology Greek freak and some were cooked on a sheet pan with red onions while I experimented with some wedged potatoes cooked right on the grill. The wedges turned out amazing and I’ll do those again. Asparagus is tossed in @boarsnightout Everything is cooked with @bearmountainbbq apple wood pellets, which give it a great flavor with minimal ash so I can spend more time cooking and less time cleaning. #turkeymeatballs #cookoutside #roastedpotatoes #bearmountainbbq #healthymeals

Some of the food from this weekend. Chicken sausage, peppers and onions with cheese sauce on a bolilo roll. Jalapenos stuffed with buffalo chicken dip and wrapped in back. Then smoked with @bearmountainbbq apple wood pellets. Fried egg with feta and hot sauce on sourdough Breakfast sandwich with scrambled eggs and @cabotcreamery habanero cheddar with bacon.
