Tri Tip Brisket style sandwich with California Bruschetta I did a low and slow long smoke with @bearmountainbbq gourmet blend on this tri tip. The tri tip was marinated for 2 days in @pepperexchange cayenne mustard and then coated in @spiceology black and blue seasoning. The bruschetta was a mix of fresh tomatoes, garlic, basil, pecorino romano, balsamic and smoked salt. Then to make it California, I added some cubed avocado. Loaded up on some Toasted homemade sourdough bread! The smoke from the gourmet blend did some magic to this tri tip. Giving it a rich but sweet smokey flavor to offset the spice from the mustard. It played really well into the black and blue seasoning. Breakfast Burritos Just hit the spot. Do you ever have one ingredient that just inspires the whole meal? Today that was @cabotcreamery smoky bacon cheddar cheese. I started with some slices melting in a tortilla, leftover ground turkey from tacos, added soft scrambled eggs, guac and sour cream and some bacon to really amp up that bacon cheddar. Everything got tightly rolled and served up with a little side of salsa. Now the real question, how much cheese did I eat while preparing the burrito. You'll never know! Thai Chili Guava Stir Fry I started by making the stir fry sauce:2 Tablespoons of @pepperexchange Thai Chili Guava2 Tablespoons Soy sauce1 Tablespoon avocado oil1/2 of one lemon2 teaspoons garlic chili flakeThen was grilling up the pork chop, I went with a togarashi rub to bring in even more flavor. Finally sitting fry your favor veggies, for me that was carrot, onion, broccoli and bell pepper. Finally toss in your softened rice noodles and finish with your stir fry sauce. To plate layer the noodles and veggies, the sliced pork chop and top with some extra of the Thai Chili Guava sauce. The sauce really pairs perfectly with pork, and turning it into a stir fry sauce layers in the flavor throughout the dish. Togarashi reverse seared NY Strip steak with roasted miso glazed carrots and a miso sauce. Ny strip seasoned with @spiceology togarashi rub and smoked with @bearmountainbbq gourmet blend for that perfect smoked beef flavor before a finishing sear for that grilled crust. Buffalo Chicken Sandwich I enjoyed the prep of this one, focusing on refinement of every ingredient to build an amazing flavor profile. Starting with boneless skinless chicken breast seasoned with @spiceology buffalo lemon pepper and smoked with @bearmountainbbq gourmet blend at 225 for a laid on heavy smoke, but with amazing balance. I smoked all the way through so the chicken gets almost the feeling of a 'skin' to it. Packed with perfect sweet smokey flavor. The bacon was over cooked to a perfect crisp. This is home cured bacon, no sugar. I stacked mixed greens and gave them a julien cut for perfectly shredded lettuce. @grillospickles chips and a splash of @franksredhot finish up the prep. I toasted the sourdough roll, and started with a base layer of @litehousefoods buttermilk ranch. Then layered all my prepped ingredients. A creative take on a classic sandwich. Using a peeler, thin slice pre cooked sausage. This gives you that tender but crispy meat once griddled. Served up with some peppers and onions and topped with a @cabotcreamery beer cheese sauce (8oz cheddar, 1/4 cup of @alesmithbrewing Octoberfest beer and 1 teaspoon sodium citrate) served up with some double fried homemade fries. Some recent meals, in order. Swedish meatballs with sauteed spinach and noodles. Smoked chicken breast with caramelized onions and cheese. Buffalo chicken saladChicken and bacon cheeseburger Chicken fried riceThe meatballs and chicken were both smoked for a nice subtle difference for maybe traditional approaches, but the added sweet smoke from @bearmountainbbq apple wood was a really lovely addition. In a rare twist I did the burgers inside on the griddle pan, but loaded then up with lots of cabot cheese which took them to the next level. The fried rice is always tasty.
