Chicken and corn tacos. I used the @bearmountainbbq cherry smoked chicken breast leftover from yesterday to make some tacos! The chicken was cubed and warmed in a pan while the tortillas were heated and coated with @cabotcreamery cheese. I had some leftover grilled corn as well. Mediterranean salad with smoked chicken breast and grilled corn. Using a premade salad kit served as an amazing base for this dinner. I seasoned some chicken breast in @neilsarap Mediterranean rub and let it get a nice smoke bath with @bearmountainbbq cherry wood at 200 degrees for about an hour, then I bumped the temp to 375 to finish. The corn was coated in butter and @spanglishasadero_official elote seasoning, foil wrapped and cooked with the chicken on the grill. Sourdough discard pizzaPepperoni, mozzarella and fresh blue African basil grown right here in the backyard. I used the @kingarthurbaking discard recipe for the crust but went with a hand kneaded approach instead of using a mixer. I also did a few rounds of stretch and folds. I have historically not used a stone and just baked with a pizza sheet. Today I tried the sheet on the stone and it protected the crust a bit to much, getting a darker cheese and lighter crust cook. Mediterranean style turkey meatballs over lemon pasta. Smoked the turkey meatballs using @bearmountainbbq cherry wood pellets for a light smoke with bold color impact on the meatballs. The lemon pasta was tossed in tzatziki sauce. With a garnish of some more feta cheese. For a side, artichoke steamed with a shallot and herb seasoning. Everything came together really well. Was absolutely delicious and full of flavor. Pork belly magic! When your friends invite you to a tailgate, pork belly and pork belly sliders will always be a winner. This pork belly was sliced into slabs and tossed in @spiceology hickory peach Porter rub. With the smoker preheated to 225, the pork belly was smoked with @bearmountainbbq cherry wood pellets for about 4 hours, giving it a deep and rich color and lovely smokey flavor. The thinner slabs were almost a pork jerky, with thicker ones falling into that pork belly burnt ends territory. After 4 hours they were tossed in a disposable tray with some butter and covered, cooking another hour. Pork belly tacos! I seasoned the pork belly in @neilsarap southwest AP and olive oil. It took a 5 hour smoke bath at 180 degrees with @bearmountainbbq red white and blue blend. Then I put each piece in foil over a tablespoon of butter and wrapped it loosely. Another 1.5 hours cooking and it was ready for a dice and pan fry. I used a white corn tortilla, and loaded in some @cabotcreamery cheddar cheese, the pork belly, chopped romaine, some olives, and a bit of sour cream. The pork was buttery soft inside and crispy outside. With an amazing smokey flavor. Reverse seared tri tip and drilled zucchini I marinated the tri tip in @mamaditasauces red sauce. With the meat marinated, I smoked it using the amazing flavor of @bearmountainbbq red white and blue blend pellets. They add so much flavor to the meat, giving it that perfect balanced smoke as an undertone to the spice from the sauce. The low and slow two hours of smoke permeated deeply into the tri-tip and set it up for a hard sear over the open flame. With the grill nice and hot from the seat I threw on some sliced zucchini as a side dish. These pellets run so clean in the @yodersmokers and make summer cooks a breeze. Double cheeseburger goalsThis is my healthier approach to a double cheeseburger, because I want my burgers but need to get focused! I let the smoke do all the work for flavor, no added oil, butter or sauce on this one. I chose @bearmountainbbq red white and blue blend for a nice smokey but balanced flavor. With classic oak bbq vibes that are recognizable in each bite. Using a frozen turkey patty and @amylufoods chicken burger, they get maximum amount of smoke while they cook and really take on a ton of flavor. Then I topped one burger with a classic aged cheddar and gave the other a bit of spice with @cabotcreamery habanero cheddar. @grillospickles Pickles are a low carb and low calorie way to up the flavor game as well, rounding out this protein packed summer bbq treat.
