Chicken & Waffles (chaffles)This recipe actually came together much quicker and easier than expected. It started with the chicken. I preheated the oven to 350 and then cooked two @cutdacarb wraps for 10 minutes(golden brown) then I pulled the wraps in a food processor till they were broken into small pieces. I used two wraps, and did one almost to a dust and the other a little chunkier for texture. I also blitzed some Parmesan and added it as well as a spoonful of nutritional yeast to the breading. Then I went with a fairly classic breading station, egg and half and half for the dip, then into my cut da carb breadcrumbs before going into an air fry basket. I sprayed the basket and the chicken with some avocado oil spray to prevent sticking and help with color. They are fried in the oven at 425 for 10 minutes.While the chicken was cooking I made the chaffles, 5 minutes in the @bydash mini waffle maker. The chaffle mix which makes two chaffles is 1 egg, 1 tablespoon almond flour, 1.5oz mozzarella, 1/4 teaspoon baking powder, @spiceology butter toss (about 1/2 teaspoon, measure with your heart)To assemble I added a pad of butter to each chaffle, a spoonful of @goodgoodbrand grape jelly, the crispy chicken and finally topped it with a drizzle of @birchbenders syrup. The chicken was crispy and delicious, though I should have added salt and more seasonings to the breading. Healthy Sunday Breakfast 2 eggs, 2 slices of bacon, wilted spinach with feta, cottage cheese and of course some fresh @paleotreats baller bread. I visited Lee yesterday at Paleo Treats here in San Diego and picked up a fresh loaf of sesame baller bread, dipped in the bacon fat and toasted, this stuff is as incredible as always. Omelette for lunchI just finished eating this, and it was so good! Why you might ask was this one any different?!? I used my home cured bacon that I coated in @neilsarap Jamaican rub before smoking! Cubes of bacon and sausage were joined by fresh spinach and @cabotcreamery cheddar inside. A little @terrapinridgefarms everything aioli on top and three eggs simply salted with @redmondrealsalt seasoning salt for the egg. Steak & Broccolini This NY Strip was reverse seared. Seasoned liberally with @redmondrealsalt and @spiceology black magic, then smoked with @bearmountainbbq hickory wood to an internal temp of 120. I brought the steak inside and seared it with @hexclad over medium high heat and avocado oil. A bit of butter to finish and a slice of butter over the top while it rested. Shredded Chicken Tacos and some humorSwipe for the humor.These chicken tacos were delicious and so easy courtesy of the premade chicken. This was from Costco, ready to go sauce and all chipotle chicken. I admit, I did not follow the directions to boil in the bag and instead just tossed it into a skillet to warm. All wrapped up in @hero low carb tortillas, some @cabotcreamery cheddar cheese, a little shredded lettuce and a scoop of @eatwholly avocado is all I needed. The humor was on the drive home from the cabin, this trailer had a toy excavator fully strapped down on the otherwise empty trailer. Thai soupChicken and shrimp made up the proteins, the veggies were snap peas, bell peppers, and potato. The broth is a lovely blend of coconut milk and chicken broth, with flavors of lemongrass, garlic and chili oil. While the chicken was cooked in the soup, I cooked the shrimp on the side. They were seasoned with @neilsarap Asian and then tossed in chili oil post cooking. Sometimes you just need a big plate of steak and eggs! Protein for the win here! Sliced up some of the leftover tri-tip. This is the smoked tri tip I made for the tacos, seasoned with @neilsarap wild game rub and cooked with @bearmountainbbq bourbon blend. To reheat it I simply sliced it and tossed it into my @hexclad pan. Once the meat was warmed through I took it out of the pan, bumped up the heat a bit and cracked in 3 eggs. Tri-Tip TacosThese tacos start with this smoked Tri-Tip. I tried all the external fat off the tri-tip and seasoned it liberally with @neilsarap wild game rub. It was smoked at 225 using @bearmountainbbq bourbon blend pellets. Finish temp was 135 and it was well rested. I grilled up some onions, simple diced onion and @chosenfoods avocado oil in a pan over medium heat. While those were cooking I toasted two @guerrerotortillas low carb tortillas. At the flip of the tortilla I pulled on plenty of tri-tip, then layered on some queso(leftover from Sunday), the grilled onions, and finally some @eatwholly avocado.
