Pork belly tacos! I seasoned the pork belly in @neilsarap southwest AP and olive oil. It took a 5 hour smoke bath at 180 degrees with @bearmountainbbq red white and blue blend. Then I put each piece in foil over a tablespoon of butter and wrapped it loosely. Another 1.5 hours cooking and it was ready for a dice and pan fry. I used a white corn tortilla, and loaded in some @cabotcreamery cheddar cheese, the pork belly, chopped romaine, some olives, and a bit of sour cream. The pork was buttery soft inside and crispy outside. With an amazing smokey flavor.
