Fried pork chop nachos Thank you to @chosenfoods for sending me so many amazing avocado oil based products! I have been a big fan of the oil and Mayo for a long time and was excited to create this dish with both of those ingredients as well as the ranch dressing! This is my go to oil as it is 100% avocado oil, has a very high smoke point, and is loaded with healthy fats. The mayo is very keto friendly with cage free eggs and avocado oil. To top it off, for me, I love that they are a local San Diego company! The pork chops were sliced thin, pounded even thinner and covered in mayo as the binder for pork panko. If you aren't low carb, regular panko or breadcrumbs would be great. They were then fried at 350 degrees in a cast iron with about 1/4 inch of avocado oil, flipping to fry both sides till a nice golden brown. From there, I topped them with lots of cheddar cheese and placed them under the broiler to melt the cheese before adding my remaining toppings.
