The meal you didn't know you needed to make today, until now. Chilaquiles! These chilaquiles were absolutely amazing, and so easy to make. Start by cooking some ground turkey with your favorite taco style seasoning. Then pan fry up two eggs. In a separate and larger pan bring to boil about a half cup of chicken broth and stir in @mamaditasauces smoked jalapeno and charred pineapple sauce. Toss tortilla chips about a handful at a time in the sauce and stir to coat. Assembly is quick and easy. Layer the chips, ground turkey and fried eggs in a large bowl. Smoked zucchini lasagna This is an amazing meal to prepare in advance and have as an easy lunch or dinner throughout the week. Replacing the noodles with zucchini keeps the carb level down. I use ground turkey as my high protein low fat meat and add spinach for some extra greens. The cream cheese, sour cream and ricotta and mozzarella make up the cheese component within the lasagna. I also layer in some marinara and top with loads of mozzarella and parmesan. Everything was seasoned with @spiceology pizza seasoning for this batch.Cooking this in the smoker gives it a really lovely smokey flavor that only gets better the next day.
