
This thick cut pork chop is seasoned with @spiceology thunderdust and smoked with @bearmountainbbq hickory wood at 225 for about an hour. The hickory smoke gives the pork a bold smokey flavor that stands up to the mustard sauce. After smoking the pork chop gets a quick sear to finish it off.
The mustard cream sauce was done in the same pan as the pork chop was seared in and combines 1/4 heavy cream, 3 tablespoons of @pepperexchange cayenne creole mustard and a splash of beef broth. Reduced down just a touch to thicken aas desired.
The green beans were sauteed with some cubes of pork belly and seasoned with salt and pepper.
This is gourmet meets comfort food at its finest. Overall this meal also works great on a budget as both pork chops and pork belly can often be found on a great sale!
