Sunday Benedict English muffin, prosciutto, spinach, poached egg and a sauce that looks like but is not hollandaise. I used some sour cream and hot sauce instead of hollandaise to avoid the high volume of butter. Served up with a side of my home cured bacon. #benedict #brunch #sundaybrunch
